1. 冬瓜小排汤

材料(Ingredients):

小排骨 300g(Pork ribs 300g)



冬瓜 500g(去皮切块)(Winter melon 500g, peeled and cubed)





姜片 3片(Ginger slices 3 pcs)



盐 1茶匙(约6g)(Salt 1 tsp, approx. 6g)



料酒 1汤匙(Cooking wine 1 tbsp)


清水 1500ml(Water 1500ml)



2. 山药青椒炒肉片

材料(Ingredients):

梅花肉 150g(切片)(Pork shoulder slices 150g)



山药 150g(去皮切片)(Yam 150g, peeled and sliced)



青椒 1个(切块)(Green Chili 1, chopped)



蒜末 1小匙(Minced garlic 1 tsp)



油 2汤匙(Oil 2 tbsp)



腌料(Marinade):

生抽 1茶匙(Light soy sauce 1 tsp)



料酒 1茶匙(Cooking wine 1 tsp)



淀粉 1茶匙(Starch 1 tsp)



调味料(Seasoning):

生抽 2茶匙(Light soy sauce 2 tsp)



鸡粉 1/2茶匙(Chicken powder 1/2 tsp)




3. 青椒毛豆炒肉丁

材料(Ingredients):

猪腿肉丁 150g(Pork leg cubes 150g)



毛豆仁 100g(Green soybeans 100g)



青椒 2个(切丁)(Green chili 2, diced)



姜末 1茶匙(Minced ginger 1 tsp)



蒜末 1小匙(Minced garlic 1 tsp)



食用油 2汤匙(Cooking oil 2 tbsp)




腌料(Marinade):

料酒 1茶匙(Cooking wine 1 tsp)



糖 1/2 茶匙(Sugar 1/2 tsp)



生抽 1茶匙(Light soy sauce 1 tsp)

调味料(Seasoning):

生抽 1茶匙(Light soy sauce 1 tsp)

蚝油 2茶匙(Oyster sauce 2 tsp)




4. 油爆花生米

材料(Ingredients):

花生米 200g(Peanuts 200g)



油 100ml(Oil 100ml, enough to cover peanuts)



蒜 2瓣(Garlic 2 cloves)



高度白酒 1茶匙(Strong liquor 1 tsp)




盐 1/2茶匙(Salt 1/2 tsp)

糖 1/2茶匙(Sugar 1/2 tsp)


5. 红烧肉

材料(Ingredients):

五花肉 500g(Pork belly 500g)



冰糖 25g(Rock sugar 25g)




香料(Spices):

姜片 1片(Ginger slice 1)



大葱 2段(scallion segments 2)



八角 1个(Star anise 1)



香叶 1片(Bay leaf 1)



桂皮 1小块(Cinnamon stick, small piece)



干辣椒段 3个(Dried chili segments 3, optional)



调味料(Seasoning):

料酒 1汤匙(Cooking wine 1 tbsp)



生抽 2汤匙(Light soy sauce 2 tbsp)



红腐乳汁 2汤匙(Fermented red bean curd juice 2 tbsp)



盐 1/2 茶匙(Salt 1/2 tsp)

清水 1L(Water 1L)


6. 番茄炒蛋

材料(Ingredients):

番茄 2个(约400g)(Tomatoes 2, about 400g)



鸡蛋 4个(Eggs 4)



盐 1茶匙(Salt 1 tsp)

油 2汤匙(Oil 2 tbsp)


调味料(Seasoning):

番茄酱 2茶匙(Ketchup 2 tsp)



盐 1/2 茶匙(Salt 1/2 tsp)

白糖 1/2 汤匙(Sugar 1/2 tbsp)


7. 回锅肉

材料(Ingredients):

三层肉 300g(Pork belly 300g or fatty leg meat)



青蒜段 50g(Garlic sprouts 50g)



蒜片 10g(Sliced garlic 10g)



郫县豆瓣酱 1汤匙(Pixian broad bean paste 1 tbsp)



调味料(Seasoning):

生抽 1茶匙(Light soy sauce 1 tsp)



老抽 1/2 茶匙(Dark soy sauce 1/2 tsp)



鸡粉 1茶匙(Chicken powder 1 tsp)



糖 1/2 茶匙(Sugar 1/2 tsp)




8. 太二酸菜鱼(复刻版)

适合:1条鲈鱼(600-700g)(For 1 sea bass, 600–700g)

主要材料(Main Ingredients):

鲈鱼 1条(Sea bass 1, deboned and sliced)



老坛酸菜 250g(Pickled mustard greens 250g, stem:leaf = 3:7)

辅料(Additional Ingredients):

泡野山椒 1汤匙(Pickled wild chili 1 tbsp, chopped)



黄灯笼椒酱 2茶匙(Yellow lantern chili sauce 2 tsp, from Hainan)



红薯淀粉 1汤匙(Sweet potato starch 1 tbsp, approx. 8g)



猪油 20g(Lard 20g)




炸蒜末 1茶匙(Fried minced garlic 1 tsp)




鱼片腌料(Fish Marinade):

盐 1/2 茶匙(Salt 1/2 tsp)



白胡椒粉 1/4 茶匙(White pepper powder 1/4 tsp)



淀粉 1汤匙(Starch 1 tbsp)



蛋清 半个(Half egg white)



调味料(Seasoning):

白胡椒粉 1/4 茶匙(White pepper powder 1/4 tsp)


盐 1/2 茶匙(Salt 1/2 tsp)

白糖 1/2 茶匙(Sugar 1/2 tsp)


9. 可乐鸡翅

材料(Ingredients):

鸡中翅 10只(Mid-joint wings 10 pcs, slit on back)

可乐 1碗(约200ml)(Cola 1 bowl, about 200ml)

生抽 1汤匙 + 1茶匙(Light soy sauce 1 tbsp + 1 tsp)

老抽 半茶匙(Dark soy sauce 1/2 tsp)

料酒 1汤匙(Cooking wine 1 tbsp)



芝麻油 1茶匙(Sesame oil 1 tsp)



生姜 3片(Ginger slices 3)




10. 糖醋排骨(水炒糖色版)

材料(Ingredients):

肋排 500g(Spare ribs 500g)

黄冰糖 40g(Yellow rock sugar 40g)



香醋 35ml(black Vinegar 35ml, acidity ≥6%)



生抽 20ml(Light soy sauce 20ml)

老抽 3ml(Dark soy sauce 3ml)

山楂干 2片(Dried hawthorn 2 slices)
