Beef Dishes 2 Stir-fry Series Shopping & Preparation List


1. 香煎凤梨牛仔骨 | Pan-Seared Pineapple Beef Short Ribs (Rich Black Pepper Flavor, Tender and Juicy)

材料 | Ingredients:

牛仔骨 (Beef short ribs): 400克 (400g, weigh with an electronic scale)



食用油 (Cooking oil): 3汤匙 (about 45ml)




腌料A | Marinade A:

大蒜泥 (Garlic paste): 8瓣 (8 cloves)



生姜泥 (Ginger paste): 30克 (30g)




白洋葱 (White onion): 1/2个 (half, blended)



苹果 (Apple): 1/2个 (half, or 150ml apple juice)



凤梨 (Pineapple): 100克 (100g, or 150ml pineapple juice)



(Blend all above ingredients to form a juice, then add Marinade B and mix well)


腌料B | Marinade B:

生抽 (Light soy sauce): 5汤匙 (5 tbsp)



老抽 (Dark soy sauce): 2汤匙 (2 tbsp)



料酒 (Cooking wine): 4汤匙 (4 tbsp)



蚝油 (Oyster sauce): 2汤匙 (2 tbsp)



白糖 (Sugar): 3汤匙 (3 tbsp)


黑胡椒粉 (Black pepper powder): 1茶匙 (1 tsp)



小葱 (Spring onions): 50克 (50g, chopped)



(This amount of marinade can marinate 1.5kg of beef short ribs)



2. 孜然牛肉粒 | Cumin Beef Cubes (Spicy, Fragrant, Crispy)

材料 | Ingredients:

牛肩软肉 (Beef chuck tender): 300克




土豆 (Potatoes): 2个 (about 200g, diced)



蒜 (Garlic): 4瓣 (about 20g, minced)



葱白 (White part of spring onion): 10克 (about 10g, minced)




葱绿 (Green part of spring onion): 10克 (about 10g, minced)





食用油 (Cooking oil): 3汤匙 (about 45ml)


腌料 | Marinade:

生抽 (Light soy sauce): 1汤匙 (1 tbsp)

老抽 (Dark soy sauce): 1汤匙 (1 tbsp)

料酒 (Cooking wine): 1汤匙 (1 tbsp)

蚝油 (Oyster sauce): 1汤匙 (1 tbsp)

淀粉 (Cornstarch): 1.5汤匙 (1.5 tbsp)



食用油 (Cooking oil): 1汤匙 (1 tbsp)


调味料 | Seasoning:

孜然粉 (Cumin powder): 1汤匙 (1 tbsp)



辣椒粉 (Chili powder): 1茶匙 (1 tsp)



盐 (Salt): 1/2茶匙 (about 3g, adjust to taste)



熟白芝麻 (Toasted white sesame seeds): 1汤匙 (1 tbsp)




3. 姜葱炒牛肉 | Ginger and Spring Onion Stir-fried Beef (Classic, Tender, and Flavorful)

材料 | Ingredients:

牛肉 (Beef chuck): 250克 (250g, weigh with an electronic scale)





大葱 (Scallion): 2根 (about 150g, cut into segments)



姜 (Ginger): 1小块 (about 20g, julienned)




蒜 (Garlic): 3瓣 (about 15g, sliced)




食用油 (Cooking oil): 3汤匙 (about 45ml)


腌料 | Marinade:

第一步 Step 1:

白糖 (Sugar): 1茶匙 (about 5g)


清水 (Water): 1汤匙 (add 3 times)


第二步 Step 2:

盐 (Salt): 1/4茶匙 (about 3g)


胡椒粉 (White pepper powder): 1/2茶匙 (1/2 tsp)



老抽 (Dark soy sauce): 1汤匙 (1 tbsp)



第三步 Step 3:

蛋清 (Egg white): 1个 (1 egg white)



淀粉 (Cornstarch): 1汤匙 (about 10g)


碗汁 | Sauce Mixture:

料酒 (Cooking wine): 1汤匙 (1 tbsp)

生抽 (Light soy sauce): 1汤匙 (1 tbsp)

老抽 (Dark soy sauce): 1/2汤匙 (1/2 tbsp)

白糖 (Sugar): 1茶匙 (1 tsp)

淀粉 (Cornstarch): 1茶匙 (1 tsp)

清水 (Water): 1汤匙 (1 tbsp)


4. 泡椒牛肉 | Pickled Chili Beef (Sour, Spicy, and Flavorful)

材料 | Ingredients:

牛腩窝肉 (Beef flank steak): 300克 (300g, sliced)




泡野山椒 (Pickled wild mountain chili): 8-10个 (sliced, adjust for spiciness)



泡姜 (Pickled ginger): 1小块 (about 15g, julienned)



蒜 (Garlic): 3瓣 (about 15g, sliced)


泡红椒 (Pickled Red chili): 1个 (about 50g, julienned)



芹菜 (Celery): 1根 (about 50g, cut into segments)



木耳 (Black fungus): 50克 (soaked and julienned)



食用油 (Cooking oil): 3汤匙 (about 45ml)


酱汁 | Sauce:

生抽 (Light soy sauce): 1汤匙 (about 15ml)

料酒 (Cooking wine): 1汤匙 (about 15ml)

白胡椒粉 (White pepper powder): 1/2茶匙 (1/2 tsp)

盐 (Salt): 1/2茶匙 (about 3g)

泡椒水 (Pickled chili water): 2汤匙 (about 30ml)



香醋 ( vinegar): 1茶匙 (about 5ml)




白糖 (Sugar): 1/2茶匙 (1/2 tsp)


鸡粉 (Chicken powder): 1/2茶匙 (1/2 tsp)



淀粉 (Cornstarch): 2茶匙 (2 tsp)

清水 (Water): 2汤匙 (about 30ml)


5. 牛肉生煎蛋 | Pan-seared Beef and Eggs

材料 | Ingredients:

牛肉碎 (Ground beef): 200克 (200g)



鸡蛋 (Eggs): 4个 (4 eggs)



小葱 (Spring onions): 2根 (about 20g, minced)



蒜 (Garlic): 2瓣 (about 10g, minced)


生姜 (Ginger): 1小块 (about 5g, minced)


小辣椒 (Small chili, optional): 2个 (about 10g, minced)



白芝麻 (White sesame seeds, optional): 适量 (to taste)



食用油 (Cooking oil): 3汤匙 (about 45ml)

青甜椒 (Green bell pepper): 1/4个 (diced)



红甜椒 (Red bell pepper): 1/4个 (diced)



姜 (Ginger): 1小块 (about 20g, sliced)

蒜 (Garlic): 3瓣 (about 15g, sliced)

黑胡椒碎 (Crushed black pepper): 1汤匙 (1 tbsp)



柠檬 (Lemon): 1个 (1 lemon, for juice)
